Overnight High-Protein, High Energy Breakfast Oats

One of my favorite high-energy, high protein breakfasts is overnight oats. I love Greek yogurt but hate paying for it, so I make my own from inexpensive plain yogurt - make sure it has no added thickener or artificial ingredients. Line a sieve with cheesecloth, dump in the yogurt, cover with plastic wrap and place in the fridge for a few hours. General rule of thumb: drain off 250 ml from 750g carton of yogurt. If the drained whey is more than that, simply stir the excess back into the yogurt. Save whey for other uses - smoothies, baking, etc.

Overnight Oats

Stir all ingredients together in a small mason jar:

1/3 cup unsweetened Almond milk (or milk of your choice)

1/3 cup Greek yogurt

1/4 cup Old-fashioned rolled oats

2 tsp. Chia seed

1 tsp. Unsweetened coconut

1 tsp. Vanilla

1/2 tsp. Matcha tea, optional

Cover and place in fridge overnight. It will keep several days so I usually make a few jars at once.

Top with your favourite seasonal or frozen fruit...berries, pineapple, mango, banana, etc.
